How to Use
•Before you start cooking in Handi, Wash with water and keep aside for one day to get it dry completely.
•Heat gently on the stove first and gradually increase the heat.
Warning: don’t keep on high flame straight away the pot might break
Washing Method
•leave hot water for 10 minutes in Handi before cleaning and then wash it properly to get all stains removed.
• Use a soft brush. ALLOW DRYING FOR 24 HOURS.
Fungus on clay pots:
Due to the porous nature of the clay pots, some of the food may get accumulated in these pores despite washing, which can encourage fungal growth, especially if the pot is not allowed to dry completely after washing.
Remedy: Wash it with hot water from both sides and allow it to dry entirely before keeping it back in the cupboard.
Alternately fill the handi with water and keep it on a low flame and wash it and allow it to dry completely.
Oil oozing out from the pot:
Another thing you might notice is oil oozing out from the pot, and the base is getting black?
Clay cooking is a slow cooking process. Because of its porosity, the oil stored in the holes from the previous cooking cycle will come out, but in significantly less amount. We should always use our pot on low to medium flame.
The stored oil will come out only from the outer side, but the pot’s inner side will not be affected. After the cooking, rinse it with hot water and allow it to dry completely.

Needs a bit of caring during washing. One advice I would give is let it dry completely before you store it in the shelf. Other thing it helped me to avoid growth of mould is heating the empty vessel after its almost dry for 10-15 min on low flame, it brings out any water that’s still in the vessel wall and now it’s completely dry
